Bologna Burnt Ends are quickly becoming a Southern favorite—and for good reason. We served this easy, crowd-pleasing recipe at the North Carolina BBQ Hall of Fame, and the pros couldn’t get enough. Smoky, sweet, and packed with flavor, it’s the perfect dish for any gathering.
Ingredients:
- (1) Pack of 2 lb. Bright Leaf Hot Dogs
- (1) Pack of 12 oz. Bright Leaf Bacon
- Hot Dog Buns
- Shredded Cheese
Cooking Instructions:
- Cut Bright Leaf bologna into 1-inch squares
- Place the bologna squares in a pan.
- Add Cackalacky Bold Gold and mix well to coat.
- Sprinkle with Kill Hogs BBQ Rub (or your preferred BBQ rub) until evenly coated.
- Place the seasoned bologna squares on a smoker grate or cooking rack.
- Smoke at 250°F for 45 minutes (hickory wood recommended).
- Remove the bologna from the smoker and transfer to an aluminum pan.
- Add six cubes of butter (whole stick) and Moore Than You Can Chew BBQ Sauce to the pan.
- Cover the pan with aluminum foil and return to the smoker.
- Smoke for an additional 30 - 45 minutes (check continuously)
- Remove from the smoker, uncover, and enjoy your delicious smoked bologna bites!
