Bright Leaf Seafood Chowder

Dive into Southern comfort dinner with this seafood chowder, featuring a mouth-watering mix of North Carolina shrimp, blue crab, and hickory-smoked, sugar-free Bright Leaf Bacon. Every spoonful of this dinner dish is a warm embrace of down-home flavors, ideal for those laid-back evenings on the porch or dazzling your guests with a taste of Southern hospitality.

Ingredients:

  • (1) 12 oz. Pack of Bright Leaf Bacon
  • 3 Cups of Heavy Cream
  • 3 Cups of Milk
  • 2 Tbsp. of Pinot Grigio
  • 1 Tbsp. of Slap Ya Mama (Cajun Seasoning)
  • 1 lb. of Large Fresh North Carolina Shrimp
  • 1 lb. of Blue Crab Meat
  • 2 Cups of Corn
  • 1 Stick of Butter
  • 4 Tbsp. of Tomato Paste
  • 4 Tbsp. of Flour
  • 1 Tbsp. of Garlic
  • (3) Russet Potatoes
  • Garnish with Green Onions

Cooking Instructions:

  1. Melt half a stick of butter in a large pot.
  2. Quickly sauté green onions and garlic for about a minute.
  3. Pour in some white wine, letting the alcohol evaporate.
  4. Sprinkle in flour, whisk it in, and cook for 1-2 minutes.
  5. Gradually add milk and heavy cream, stirring until the mixture thickens.
  6. Mix in Slap Ya Mama seasoning and tomato paste.
  7. In a separate pan, sauté shrimp in another half stick of butter, then set aside once cooked.
  8. (Optional) In the same pan, use 2 tbsp of butter to warm the crab meat, then remove.
  9. Add corn and pre-boiled potatoes to the pot.
  10. Once the chowder thickens, stir in the cooked shrimp and crab.
  11. Serve hot, garnished with chopped green onions, Bright Leaf Bacon, and a sprinkle of Slap Ya Mama.
