Welcome to the North Carolina Collaboration Cookbook! We kicked things off by heading to Raleigh to visit our friends at Bone Suckin' Sauce. Together, we took our Bright Leaf HOT Bologna (made with beef, pork, and a kick of crushed red pepper) and paired it with their Sweet Spicy Mustard, Seasoning & Rub, and Eastern Vinegar to create something special: Bloomin’ Bologna.
We call them Bologna Fingers because they look like french fries you can dip. Perfect for parties, tailgates, or gameday snacking!
Ingredients:
- (1) 3 lb. Stick of Bright Leaf HOT Bologna
- Bone Suckin' Sauce "Sweet Spicy" Mustard
- Bone Suckin' Sauce Seasoning & Rub
- Dipping: Bone Suckin' Sauce Eastern Vinegar

Cooking Instructions:
- Start with a 3 lb. Bright Leaf HOT Bologna stick. Cut it in half across the short side. Using a knife, make crosshatch cuts about ¾ of the way down—four slices one way, then rotate and slice perpendicular lines to create “fingers.”
- Coat the entire bologna generously with Bone Suckin' Sauce Sweet Spicy Mustard.
- Sprinkle Bone Suckin' Sauce Seasoning & Rub all over. Gently pull apart the cut edges so the rub works its way into the “fingers.”
- Place the bologna on your smoker at 250 degrees and cook for about 1½ hours, until the “fingers” separate and caramelize.
- Remove from the smoker, tear off the bologna “fingers,” and enjoy them dipped in Bone Suckin' Sauce Eastern Vinegar.
