Anything wrapped in bacon is amazing! We wrapped some scallops in Bright Leaf Bacon and we couldn't get enough of it.
Ingredients:
- (1) 12 oz. Pack of Bright Leaf Bacon
- Scallops
- Red Bell Peppers
- Potatoes
- Onions
- Goat Cheese
- Squash
- Zucchini
- Garlic Salt
- Balsamic Glaze
- Slap Ya Mama Seasoning (not required but adds an extra kick)

Cooking Instructions:
- Wrap the scallops in Bright Leaf Bacon & use grill pins to hold them together
- Season the scallops with garlic salt
- Cook and sear the scallops
- Cook the veggies on the griddle at 375 degrees in butter and olive oil and season with garlic salt
- After the veggies are done, top with crumbled goat cheese and balsamic glaze!
- Enjoy!
